Die Kardamomkapseln werden bei optimaler Reife geerntet, schonend getrocknet und anschliessend nach Grösse, Farbe und Qualität sortiert. Da die Kapseln ganz bleiben, sind die Samen im Inneren gut geschützt und bewahren ihr charakteristisches Aroma besonders lange.
Grüner Kardamom kann im Ganzen mitgekocht oder kurz vor der Verwendung geöffnet beziehungsweise im Mörser angestossen werden. So werden die ätherischen Öle freigesetzt und das frische, komplexe Aroma kommt besonders gut zur Geltung.
Herkunft
Der grüne Kardamom stammt aus Guatemala. Das tropische Klima und die hohe Luftfeuchtigkeit bieten gute Bedingungen für den Anbau und die Entwicklung seines intensiven Aromas.
Anbau / Herstellung / Ernte
Der Kardamom wird nach den Richtlinien des ökologischen Landbaus kultiviert. Die Kapseln werden bei entsprechender Reife geerntet, schonend getrocknet und anschliessend sorgfältig sortiert.
Besonderheiten
Ganze Kardamomkapseln bewahren ihr Aroma länger als bereits gemahlener Kardamom. Die Samen können direkt vor der Verwendung aus den Kapseln gelöst und frisch gemörsert oder gemahlen werden.
